Try my healthy recipe idea to celebrate National Vegetarian Week

It’s National Vegetarian Week and even if you don’t stick to a strict vegetarian diet usually, it’ll do you no harm to eat a vegetarian diet for one week. This will focus your thinking onto getting many more veggies into your diet which are high in nutrition and low in fats.


In this dish I have simply grilled all my vegetables; aubergine, courgette, peppers, tomatoes with a drizzle of olive and a handful of fresh herbs. The flavours are sweet and full and by adding a portion of sauté Elfe potatoes on top this dish is perfectly nutritionally balanced and filling!

You can use pretty much any vegetable for this dish, for ingredients like broccoli and cauliflower, par boil first and then grill along with the other veggies. Enjoy!
